docs: mm: fix vm overcommit documentation for OVERCOMMIT_GUESS

"mm: fix false-positive OVERCOMMIT_GUESS failures"
changed the behavior of the default OVERCOMMIT_GUESS setting.
Reflect the change also in the Documentation, namely files:
